Note: You may want to slightly cook harder vegetables like mushrooms and peppers in separate skillet. Add a little butter or olive oil to small skillet; heat; add vegetables and cook until they’re slightly softened, stirring often. Remove from heat and set aside.

Place 8-inch skillet on stove and turn on medium heat. Crack two eggs into bowl, and add 2 tablespoons of water. Salt and pepper to taste. Stir eggs with a rapid motion using a whisk until mixture is evenly yellow. Place 1 teaspoon butter or margarine in skillet; quickly move it around with rubber spatula to coat bottom of skillet. Immediately pour egg mixture into skillet. Let eggs cook about 15–30 seconds, then gently move eggs away from edges while tipping skillet in various directions, allowing the uncooked mixture to flow off the top to the exposed edge. Do this until all liquid mixture is gone. Let eggs cook until they’re solid but still shiny. On one half of egg surface, add your ingredients—meat first, then vegetables, then cheese. Turn off heat.

Loosen eggs around edges and flip empty half over ingredients. Set serving plate on counter. To remove omelet from pan, get skillet close to your serving plate and flip quickly onto plate.

Essential quiche

Note: Quiche can be served for breakfast, lunch, or dinner. It’s a great, easy meal. Serve with fruit or a salad.

One 8-inch single piecrust, either store-bought or homemade, in pie plate
